I have been catching and hatching as many silver amagnae a day as I can. I think I get around 150-200 silver eggs caught and hatched a day (when I'm really paying attention). I have more trouble with the new amagnae coming up when I want the old. I end up having to catch and freeze them to get another chance at a silver. So we're having opposite problems it seems. I even got the entire stream, except for one egg, cascara. So it's pretty even. Catch and hatch what you want, catch and freeze what you don't. I just wish the event lasted a little longer 'cause I haven't been able to be active anywhere near the amount that I want. Especially since my first batch all grew above 5% before I could get to them and I wanted a full frozen colour set (all 4 sprites both M and F hatchies and adults).

Hence why I said of my close observation... They very infrequently drop and are highly outnumbered by old Amagnae. I managed to get a total of 49 cascara turkey birds with this slow drop rate you talk about. That's more than just a set of each color. It's not that difficult. I Think the problem here is the level of activity. I'm not talking about you specifically, but if you log in once or twice a day and all you see is old amagnae, then yes it's a problem. However, we can't expect to get everything without a minimum amount of effort. If you're active, they're relatively easy to get.
If you're willing to wait until you have multiple egg slots open and take the time to freeze the eggs you do not want, it isn't difficult to get the eggs you do want. It takes some patience, especially with everyone grabbing the new eggs, but it isn't hard to do.
Is it frustrating to grab an unwanted egg only to have someone else grab the new egg you were after? Of course! But if you keep at it, you will get them. This is how I always do these sorts of events. And as long as I have a bit of time to get online (and use Yarolds to help hatch eggs quicker) I typically end up with plenty for myself plus extras. Patience pays off.

I just need one more yellow hatchling and I'm done with my families. I have a hatchling, I'm just waiting till it turns yellow to stop the rotation using the moon shard.

Yeah, I haven't put in much effort this event either, just stream cleaned once or twice a day per day until I got 5 of the new turkeys, which was enough to hatch about 20 or so.
