I wonder which stream areas you can find them, they appear to be based off of butterflies and I adore butterflies so this would help me out a lot! [Im aware you can buy some from the inn but I'm looking for stream-born ones]

The Bestiary (found here) should answer your questions about these and other creatures. Monarch and swallowtail lunestres can be found in the Stream (but not in any of the tributaries), birdwing lunestres can be bought from Remy's Inn, and ortus lunestre dragons are retired donation pets and can now only be bought from other players.

You can look under Waynal or Mercado in the Merchant District section of the forums to see if any players are offering any of the lunestre types for sale or in Zocalo to see if anyone might be giving them away.
