Maybe youngsters are killed since their skins might not be thick enough? Of course I never eat my animals, but I do like some lobster. It's like a giant shrimp, but it developed further than said shrimp...both are yummy to eat though.

I just realized how odd of a conversation this is. 
we're talking about eating a creature that may have some high level of intellect.
I can see these guys deciding to wage war against us because we keep eating them.

Little cray fish have hard shells but they are thinner then they remain fairly hard until they get bigger then they get all soft.

I would just like to point out that pigs are smart and humans eat them.
