It means that if you are ordering different species, if you will accept them in different trades at different times, rather than all together. So say you ordered the following;
• 10 Ariessa
• 5 Corax Raven
• 2 Ashevors
Then the form asked if you were willing to accept 'sets' meaning would you like them to send you each of these groups in separate trades as they finish them. So if they finished the Ashevors first, they would send you them as the first 'set', and then continue on with the rest of your order.
Does that make sense? Sorry, I am awful at explaining things

The most common meaning for a "set" is a collection of a creature in different stages, i.e. an egg, a hatchling (or one male hatchling, one female hatchling) and an adult (or a male and a female adult).
In case it's not clear on the shop wjat they mean you can also ask them to clarify, as people lay have a different idea as to what a set means.
