Celestial Venison Decadence
Serves 2 to 4

When the Constellation Hind was released Xeron mentioned "Celestial Venison". Well, the idea stuck with me. So, here it is: dark, rich, and a bit decadent. This dish is PERFECT with venison, but since it is hard to get by sometimes (Delroch) veal will suffice, too.

INGREDIENTS:
4 pieces of veal or venison tenderloin, about 7 oz (200 g) each
1/2 cup (125 ml) red wine (or half red, half port wine)
1 cup (250 ml) beef stock
6-8 tsp (30-40 g) butter
1-3 tsp bitter-sweet orange marmalade, depending on your taste
6 oz (170 g) blackberries
1/2-1 tsp orange zest
4 tsp (20 g) dark chocolate, 72% or more, grated
(Pink Himalayan) sea salt and black pepper

1. Preheat oven to 356˚F (180˚C).
2. Season venison/veal. Sear on high heat for about 1 minute on each side.
3. Place in oven for about 5 minutes, the venison/veal should be medium rare. If you prefer a medium or medium well result adjust the time, and check the internal temperature of venison/veal frequently. Remove, cover with aluminium foil, and keep warm.
4. Save the venison/veal juice. Bring to a boil over medium high heat. Deglaze with wine.
6. Reduce by half. Be patient. Add beef stock.
7. Reduce by half again. Be patient again, too. First whisk in the butter, next the marmalade. Add blackberries, and orange zest. Simmer for 2-3 more minutes or until the sauce reaches the desired consistency.
8. Last but not least whisk in the chocolate right before serving. Season with black pepper and (pink Himalayan) sea salt. Serve with red cabbage, and mashed potatoes or croquettes on the side. Note: I use to cook my red cabbage with tiny apple pieces. Sometimes I also add a hint of allspice to it. My mashed potatoes are usually seasoned with a pinch of nutmeg.
