Mama Magi Pasta
Serves 4 to 6

Well, when I made this pasta dish I had to deal with a veeery sick toddler, so I needed an easy and quick meal for dinner. One pot pasta is just perfect for adventurous Magi, and great for times when you are to busy dealing with about 1.000 other things in your keep. Simply toss all ingredients in one pot, let everything cook for a few minutes, and sit down to enjoy a delicious and healthy meal plus some peaceful minutes before you have to rush back to the next big mess or quest.

INGREDIENTS:
12 oz (340 g) linguine pasta
1 can (28 oz/794 g) diced tomatoes with liquid
1 can (6 oz/170 g) pitted black olives without liquid
1 medium onion, cut into thin strips
1 celery, cut into small pieces
4 cloves of garlic, thinly sliced
0.42 oz (12 g) fresh or lightly dried basil leaves
2 tsp dried oregano
4 cups chicken broth
Sea salt and black pepper
Parmigiano-Reggiano, grated

1. Place pasta, tomatoes, onion, olives, celery, and garlic in a large pot. Pour in chicken broth. Sprinkle with oregano, and basil (if lightly dried).
2. Cover pot and bring to a boil. Reduce to a low simmer. Keep covered and cook for about 10 minutes. Stir once in a while. Cook until almost all liquid has evaporated.
3. Season to taste with sea salt and black pepper. Add basil leaves (if fresh). Stir well before serving. Garnish with grated Parmigiano-Reggiano.
