Do you have to freeze something mid click and hope you halt the progress bar at the right place? Or do you just get lucky- does each individual creature have a different click threshold so that you will occasionally get one that will rest at a special percent on it's own?
Kind of like the last; there are minute fractions involved and every once in a while (because each click is also a random percentage within a set range of possibilities), you get a creature with a fun percentage.

So of course you also ended up with collectors

Some of the 0% hatchlings are from other avenues, however -like some events had various possible methods of obtaining a creature instead of an egg; if they weren't adult they were often hatchlings and at 0%. Or the crash recoveries also gave 0% hatchlings.

Pygmy phoenixes are the only species that do the thing they do, where they go from egg to 100% hatchling right away, because hatchling is their final form.

Hm, not sure how much sense I'm making to someone who hasn't had a chance to see all this in action. Hopefully you can decipher it!

No, that was helpful, thank you! :) I didn't know that each click itself was randomised

I have a question about the Box of Chocolates. When you feed one to one of your eggs and the percentage jumps up, is that the only time the click percentage is higher or is every click after the feeding higher then it would originally have been?

Using the Box of Chocolates causes the growth jump itself. The creature does not need to be clicked to benefit. As such, it is a single jump for a single box used.

Thank you for the info. :)

I was going through a click site clicking people's creatures, and I noticed that I was only occasionally getting the one gold from clicking on the creatures even though they weren't frozen/in a trade as far as I could tell. Is it random or something?

They might have been moved into a protected tab. You won't gain any gold from clicking creatures in those.

If you happened to be using the pethatchery.co.uk site, I wouldn't bother clicking on adults or hatchlings there. That site is not cleaned up very often, so you'll waste a lot of time clicking things that have already been protected but not removed from the nursery. I only click eggs when I go through there. :)
